Salad Dressings – Tips and Recipes

Dressings are as important as the content of your salad. And not all dressings go with any salad, that’s would be too easy! In my opinion, richer salads made of many different ingredients, including savoury and sweet notes, ask for simple salad dressing – a dash of extra virgin olive oil and lemon juice is just perfect. On the other hand, mustard or tahini dressing go well with lighter salads that do not already include too many different flavours.

Furthermore, I do not use vinegar in my dressings but lemon juice. Because I do like much more the taste of lemon, but also because the vitamin C of the lemon helps to increase absorption of the minerals contained in your salad.

Wholegrain mustard dressing

Ingredients

  • 1 tablespoon of wholegrain mustard
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of lemon juice

Method

  1. Mix vigorously the mustard and oil.
  2. Add the lemon and mix.

Tahini and soy sauce dressing

Ingredients

  • 2 tablespoons of tahini
  • 1 tablespoon of soy sauce
  • 1 tablespoon of lemon juice
  • 1-2 tablespoons of water for consistency

Method

  1. Mix vigorously the tahini and soy sauce.
  2. Add the lemon and mix.
  3. Add water if needed.
