There are so many vegan burger recipes out there… Seitan, tofu, portobello mushroom, black beans, lentils, quinoa… you name it! Some easy to make, other a bit more complex. Some that really try to mimic meat, other that just want to taste nice. My vegan black bean burger recipe is in the “easy to make and taste nice” category.
I like making (and eating!) vegan burgers. But I always make them in a different way – depending on my mood and on what’s in my fridge. However, I sometimes have to write down recipes, and today it is for one of my workshops around food waste. The theme of this workshop: cook a tasty and healthy meal with potatoes . Alright… Also, the recipes have to be easy to make and with a minimum of ingredients so that participants are more likely to make them at home. So this is how I came up with this vegan black bean burger recipe: a few cooked potatoes leftover from last night? A can of black beans? Mash them together, add onions, garlic, spices and some veg (peas, mushroom…) and you have your vegan burgers! Easy, isn’t it? And super tasty!

The workshops we are currently running around food waste with Made In Hackney are part of the Small Change Big Difference program to raise awareness of food waste. We teach people how to plan their meal, shop, store and cook with leftover, old veg & fruits, and unusual parts of veg. A mix between informative and hands-on workshops with a real impact on people behavior.

(Make 12 burgers)
- 1 tin of black beans, drained and rinsed
- 2 medium potatoes, cooked
- 1 cup of frozen peas
- 1 onion, chopped
- 2 cloves of garlic, minced
- A small handful of parsley, finely chopped
- 1 teaspoon of ground cumin
- Extra virgin olive oil
- Black pepper
- A pinch of salt
Optional spices: chilli, ginger, mustard seeds, turmeric, nutmeg, etc.
Optional veg: grated carrots, grated apple, mushroom (sauté in olive oil), celery, cabbage, etc.
- Pre-heat the oven to 180°C.
- Mash the beans and potatoes roughly using a fork. The final consistency should be sticky but don’t over-mash the beans, you want to still have some whole beans.
- Add all the other ingredients and mix well.
- Shape the mixture into burgers and place in a lined oven tray, brushed with oil on both sides.
- Bake for about 15 minutes, until nicely brown but not too dry.
Optional: for extra flavours, sauté the onions in oil for 5 minutes. Add spices, sauté for another minute, and add the other veg. Cook for 5 minutes, let it cool down and then add to the potatoes and beans mixture.
